Cheese factory built by the Carpenter brothers, Robert and Judson, upon their return from active duty in the civil War Built at West Almond, NY, in 1865,
There were three major creameries and cheese factories built in West Almond in the late 1800s....
Milk was bought and separated. The skim milk was given back to the farmers to feed their animals, the cream was sent to NY City to make butter. The rest of the milk was mad into cheese and cheese curd..............
The cheese was fashioned into large bricks which was stored for two or three months and then shipped by rail to the cities.
